ISO 22000: the standard for food safety

International food safety management from raw material to distribution

ISO 22000 is a globally recognized standard for food safety management. Organizations use this standard to control risks, improve processes and ensure food safety at every stage of the supply chain — from raw materials to distribution.

The correct use of hygiene products and personal protective equipment (PPE) also plays an important role within this framework. This includes clear clothing policies, proper hand hygiene and the use of suitable food-grade and, where necessary, detectable products.

Why ISO 22000 is important for food producers

Unlike BRCGS or IFS, which were primarily developed as product-focused standards for suppliers within the retail supply chain, ISO 22000 is a management system standard that can be applied across the entire food chain. The standard provides organizations with a structured framework to systematically identify food safety hazards, establish control measures and demonstrate the effectiveness of the system during audits.

The core of ISO 22000

ISO 22000 is a standard that supports organizations in establishing and maintaining a Food Safety Management System (FSMS). It combines HACCP principles, process management aligned with ISO 9001 and clear communication throughout the supply chain. As a result, risks are not only identified, but also demonstrably controlled and periodically evaluated.

The key elements of ISO 22000

The standard focuses on several core themes:

  • Management commitment and system assurance: ISO 22000, developed by ISO (International Organization for Standardization), requires demonstrable management commitment and a solid foundation of procedures and documented information.

Hygiene is essential within this framework. ISO 22000 requires companies to ensure that employees do not pose a risk to the production process. This includes clear clothing policies, proper hand hygiene and a clean, well-organized working environment. PPE plays a crucial role in supporting these controls.

Scope of ISO 22000

ISO 22000 is not a legal requirement, but many companies choose certification because it builds trust with retailers, auditors and international customers.

The standard is suitable for:

  • Food producers
  • Packaging companies
  • Logistics service providers
  • Food service organizations
  • Wholesalers
  • Suppliers of food contact materials

Manufacturers of hygiene and protective products can also demonstrate within the ISO 22000 framework that their products are produced safely and consistently.

PPE within ISO 22000

Although ISO 22000 is less prescriptive than standards such as BRCGS, it is clear that hygiene products and PPE are essential for preventing contamination. Suitable solutions include hairnets, beard covers, disposable hand protection and protective clothing that prevent fibres, dirt and microorganisms from contaminating the product.

In addition, many companies recommend the use of detectable PPE, particularly in production lines where metal detection systems are applied. Waterproof plasters are also recommended to prevent contamination caused by loose or moisture-compromised dressings.

How to comply with ISO 22000

Successful implementation begins with a thorough risk assessment and clearly defined processes. Employees must understand what is expected of them and how to work safely and hygienically.

It is essential that procedures are followed, records are properly maintained and deviations are addressed in a timely manner. Regular internal audits and controls help ensure continuous improvement and maintain audit readiness.
